Easy, great, really good but I will not lie and say that it is low-fat. It's not. This should make enough for about 8-10 people for snacking. Quick Idea: Toss with hot pasta after the dip is baked and top with grilled chicken for a great dinner!
You will need:
1 Package of Frozen Spinach
1 1/2 Jars of Alfredo Sauce
2 Cans of Artichoke Hearts (In water or brine, not the marinated ones)
1 Bag of Shredded Mozzarella Cheese
1 Bag of Shredded Parmesan Cheese
2 tablespoons of Dried Minced Onion
1 tablespoon of Garlic Powder
Here's What You Do:
Pre-heat oven to 375.
Thaw and drain spinach. (Hint: wrap thawed spinach in a dish towel and squeeze to get the most amount of liquid out of the spinach.)
Drain and chop artichoke hearts.
Mix together spinach, artichoke hearts and the rest of the ingredients BUT only 1/2 of the parmesan cheese.
Put in a baking dish.
Bake uncovered for 30-45 minutes depending on how thick it is in the pan. When it is hot and bubbly the whole way through it is done.
Top with reserved parmesan and broil on low just to brown the cheese on the top.
Serve with bagel chips, tortilla chips or on bread.
